Dal Makhani and Cheese Naan - Main Course

Hi there! This is my recipe for Delhi's speciality - Dal Makhani and Cheese Naan. Don't go by the name, it is a very easy recipe.


Ingredients -

Dal Makhani

One cup (250 g) black urad dal

0.25 cup Rajma (kidney beans)

3 big tomatoes

2 tablespoons of butter

2 bay leaves

1 medium-sized cinamon

2 green chilllies

2 cardamoms

0.25 cup cream


Cheese Naan

Two cups all purpose flour (maida)

0.5 teaspoon salt

1 cup curd

1 teaspoon sesame seeds

0.25 teaspoon baking soda

Grated cheese

Water (as required to bind)


Tempering

1 tablepoon clarified butter (ghee)

0.25 teaspoon asafoetida

1 teaspoon cumin seeds

0.25 teaspoon turmeric powder

1 teaspoon coriander powder

0.25 teaspoon dry fenugreek (methi) leaves

Dal Makhani -

  • Soak Urad Dal and Rajma in lukewarm water for 6 hours.

  • Put dal in the cooker, add two glasses of water, add tomato puree/paste, add the bay leaves, cinnamon, green chillies and butter.

  • Cook on a high flame, and after the whistle, cook for 10 minutes in the low flame.

  • Open the lid of the cooker after it cools for 10 minutes.

  • The dal is now boiled, blend it a little.

  • Put half tablespoon butter into the dal.

  • Tempering - Ghee, cumin seeds, asafoetida, red chilly powder, turmeric and coriander powder.

  • Add this tempering to the dal, add salt and garam masala.

  • Add lemon juice and dried fenugreek/methi leaves to the dal.

  • Add cream for decoration.


Cheese Naan -

  • Add flour, salt, curd, sesame seeds and baking soda.

  • Add water (as needed) to make the dough smooth.

  • Cover the dough for 10-15 minutes.

  • Grate cheese and keep it ready for putting into the naan.

  • Heat the pan, and knead the dough such that it becomes soft.

  • Make two naans of the same size, and add cheese on one naan and place the second naan on it.

  • Flatten the naans out till they stick uniformly to each other.

  • Place this on the heated pan, and cook it on the medium flame, and after turning one side, switch to low flame.

  • Cook until it is brownish in colour, now place butter, and cheese naan is ready !
