Gluten-free Lotus seeds Panjiri, Janmashtami Special by Tulita aahar

It is a North Indian Sweet delicacy made from whole-wheat flour fried in sugar and ghee, heavily laced with dried fruits and herbal gums. It is eaten by women after giving birth as a nutritional supplement, to promote healing and lactation, or eaten in general in the winters to ward off cold. Its usage is culturally and traditionally meaningful. Here, our Chef has attempted to make something gluten-free so that people with dietary restrictions can also enjoy this delicacy. Hope you enjoy the recipe.

Preparation time: 10 mins


Ingredients:

  1. 2.5 TSP ghee

  2. 1 cup makhana/ lotus seeds

  3. 2 TSP cashew

  4. 2 TSP almonds

  5. 1/4 TSP grated coconuts

  6. 100 gram powdered sugar


Recipe to make Gluten-free panjiri:

  1. Add 1 TSP ghee and a cup of lotus seeds or makhana and roast on medium-low flame for 5 minutes.

  2. In another pan, add 1 TSP ghee and 2 TSPS cashews and roast for 30 seconds on low flame, add 2 TSP almonds and roast as well.

  3. Add 1/4 TSP dry grated coconut flesh (fresh or dehydrated)

  4. Combine well and add the lotus seeds powder( crush them in a mixer-grinder).

  5. To this add 100 grams of powdered sugar (approx half a cup)

  6. Add 1/2 TSP ghee to combine well and enjoy this yummy and quick sweet
