Protein-rich rajasthani recipe. The best curry for any naan/bread/parathas.
Preparation time: 20 mins
Ingredients:
1 cup gram flour
5 TBSP oil
1/2 TSP mustard seeds
1/2 TSP cumin seeds
1/4 TSP asafoetida
1 bay leaf
Curry leaves, chopped green chilis
1 chopped onion
Masala prep ingredients - 1/4 TSP turmeric powder, 1.5 TSP red chili powder, 1 TSP garam masala, 2 TSP coriander powder, 1 TSP dry mango powder
Finely chopped coriander leaves

Recipe to make Peetla:
Heat a pan and add 4 TBSP oil. Once the oil heats up, add 1/2 TSP mustard seeds and 1/2 TSP cumin seeds.
Add 1/4 TSP asafoetida or a pinch and 1 bay leaf. This is very good to promote digestion.
To this add, chopped green chilis, and some curry leaves.
Now add 1 chopped onion to this and saute well on the medium flame until light brown or transparent.
MASALA for the curry - Add salt in it according to taste (1 TSP is preferred). Seasonings will include 1/4 TSP turmeric powder, 1.5 TSP red chili powder, 1 TSP garam masala, 2 TSP coriander powder, 1 TSP dry mango powder.
Now the onions are cooked a little, add 1 TSP gram flour into it.
Add 1 more TBSP oil and combine well. Heat 3 parts of water.
Add the masala mix and mix well then add the 3 parts water.
Mix well so that there are no clusters. Heat on medium flame Garnish with finely chopped coriander.
