Tri -Colour Shakar pare Or Marwari Petha

Petha is made during Holi and Diwali in Rajasthan. It is known as Shakar Pare in Marathi. Usually, we make it in white colour. I made it in three colours today on the occasion of Holi. This is liked by all age groups, especially by children.

Ingredients to make Petha:

  1. White enriched flour or maida - 2 cups

  2. Ghee/condensed butter - 1/4 cup

  3. Sugar - 1 cup

  4. Water - 1/4 cup ( for sugar dipping solution)

  5. Ghee for frying the Petha

  6. Food colors: blue and red.

Preparation time: 20 mins

Cooking time: 10 mins



Recipe for the Petha-


  • Strain maida and mix 1/4th cup ghee for kneading the dough so it will become soft and smooth. Now make three parts of it.

  • Take 1/8 cup of water in 2 small bowls each and add 6 to 7 drops of both colors separately and make the dough of both colors.

  • Now prepare the white color dough also in the same way (no color here).

  • Then brush ghee on all the three dough and cover it and keep for 10 minutes.

  • In the meantime, let us heat 3 cups of ghee in a frying wok.

  • Smoothen the dough out one by one and roll it and cut into a rectangular shape as shown.

  • Fry these rectangular pieces on low gas flame till turns light brown. (Be gentle when the ghee heats up as it may brown the pieces beyond expectation.)

  • Take 1 cup sugar and 1/4 cup water for Sugar dipping solution. Stir it till it boils properly and check the consistency. It should be 1 thread consistency and be sticky enough to wash off easily.

  • Now mix the white one first and mix in solution carefully so it should not break. After 2 minutes take it out on one plate. Now make the other two colors in the same way.

Tricolor Petha / Shakar pare is ready. Enjoy :)
